Yes, this will be possible some day.  This is called optical character recognition or optical glyph recognition.

There have been several projects in the past aimed at SignWriting recognition and there is currently one on GitHub.

Please see the attached video clip of the "Scribble" feature in Apple devices. They're doing it also for Chinese characters. 

Could this be possible for SignWriting? (Also for DanceWriting, MimeWriting, Sutton Movement Writing for that matter?)
